How to receive fish safely?

Fish is a highly perishable product and suffers the most from time and temperature abuse. In this video we will look at how we can receive fish safely in the hotel. We cover the various criteria and what to look out for in this video

  • Fish is highly perishable product
  • Recieve the product in ice
  • Immediately transfer it to fresh crushed ice
  • Check the gills and eyes for brightness
  • Should smell of fresh ocean and seaweed
